Recipe of the Month: The Perfect Soup & Sandwich

You know what I love most about coming in from a long day out in the cold? A nice bowl of hot soup and a great sandwich. It warms me from the inside out and satisfies my hunger at the same time…there really is nothing better! This month I’ll show you a quick Crab & Corn Chowder to go with a hearty Turkey Sandwich.


Crab & Corn Chowder

Ingredients:
½ Stick of Butter
1 medium onion finely chopped
¼ cup of flour
4 cups heavy cream
1 tsp minced garlic
Salt, Pepper
1 package frozen sweet corn
1 lb Lump Crab Meat (shells & cartilage removed)
¼ cup sliced green onion for garnish

In a medium sauce pan melt the butter and sauté the chopped onion until tender, then add the garlic. Stir in the flour until you create a nice roux. Slowly add the heavy cream until it thickens. This should about 20 minutes. Once the mixture has thickened add the sweet corn and salt and pepper to taste. Add the crab meat and heat through. Ladle your soup into a nice big bowl and garnish with green onion.




Turkey Sandwich


Ingredients:
2 Slices of Potato Scallion Bread (or bread of your choice)
¼ lb of honey roasted turkey
3 Slices beef bacon (or bacon of your choice) cooked
2 Slices of Roma Tomato
1 leaf Bibb Lettuce
2 tsp Peppercorn Ranch Salad Dressing
1 Slice Gruyere Cheese
2 Slices Ripe Hass Avocado

Toast your sliced bread and place the Peppercorn Ranch dressing on each side. On one slice layer your cheese, turkey, tomato, lettuce, bacon and avocado. Salt & Pepper to taste and finish with the last slice of toasted bread. Slice this delicious sandwich in half sit down and enjoy your lunch!
